Vegetable Rice
Ingredients
- Rice – 200g
- Red onion – 1
- Medium sized tomato – 1
- French beans – 10
- Green peas – 60g
- Cauliflower – 60g
- Carrots – 2
- Bayleaf – 1
- Cinnamon stick – 1
- Cloves – 2
- Cardamom – 1
- Green chillies – 2
- Turmeric powder – 1/4 tsp
- Red chilly powder – 1/4 tsp
- Garam masala – 1/4 tsp
- Coriander leaves – Few
- Oil – Required
- Ghee – Required
- Salt – Required
How to Prepare
Total Preparation time: 35-40 minutes
- Wash rice cleanly then soak in 300 ml water for 30 minutes
- Chop the onion, chop the tomato and chop the coriander leaves
Then Chop french bean, chop carrots, cut cauliflower into small pieces, slit green chillies - Take a pressure cooker, add 2 tbsp oil and 1 tbsp ghee then heats up
- After oil heats up, add bay leaf followed cinnamon stick, cloves and cardamom
- Fry them for 1 minute then add onion, tomato, green chillies and salt
- Sauté continuously till onion become golden brown after that add carrot, green peas, french beans and cauliflower
- Fry it for 3 minutes then add turmeric powder, red chilly powder, garam masala
- Mix them then add soaked rice with water then add required salt for taste
- Mix well then close it using pressure cooker lid, cook it in medium flame for 2 whistles.
- After that turn off the flame then remove the pressure regulator and let the steam goes off naturally
- After pressure become normal open the lid and fluff the rice carefully with a fork
- Tightly close the pressure cooker with lid and cook for three to four whistles
- Finally garnish the rice with coriander leaf
- Now the Vegetable rice is ready for serve
