Spinach Rice – கீரை சாதம்
Ingredients
- Rice – 250 g
- Bengal gram dhal – 50 g
- Spinach (Foxtail amaranth or Amaranthus aritis or Tropical amaranth) – 3 cups(250ml cup)
- Red onion – 1
- Turmeric powder – 1/4 tbsp
- Green chillies – 2
- Dry chillies – 3
- Coriander seeds – 1 tsp
- Fenugreek seeds – 1/5 tsp
- Cinnamon stick – 1
- Cloves – 2
- Coconut – 1
- Garlic cloves – 3
- asafoetida – A pinch
- Mustard seeds – 1 tsp
- Urad dhal – 1 tbsp
- Curry leaves – Required
- Peanuts – 1 tbsp
- Oil – Required
- Salt – Requried
How to Prepare
Total Preparation time: 25-30 minutes
- Take a vessel then add water, salt and spinach and soak it for 20 minutes to avoid pest effects, then wash it cleanly.
- Remove water and chop spinach finely and keep aside
- Wash rice cleanly then soak it in 380 ml water for 30 minutes and cook it then transfer into a bowl and keep aside
- Wash Bengal dhal and boil it in 100 g water for 3 minutes and mash it and keep aside
- Chop onion, chop garlic, chop coriander leaves, chop green chillies, grate coconut separately and keep aside
- Heat a pan, add 1 drop oil and fry coriander seeds, fenugreek seeds, cinnamon stick, cloves, 2 tbsp grated coconut, 2 red chillies separately and keep aside separately
- Then Grind fried ingredients together like a nice powder and save it in a cup and keep aside
- Remove the skin of peanuts then fry peanuts without oil for 2 mintes and keep aside
- Take a pan, heat 2 tsp oil then add mustard seeds.
- Once seeds crackles, add urad dhal followed by asafoetida, onion
- Fry them for 2 minutes till the onion become golden
- Add green chillies, red chilli, curry leaves and fry for a minute
- Then add grind powder and saute it for 10 seconds
- After that add garlic, saute for 10 seconds then add mushed bengal gram and mix it for 5 seconds
- Make them to cook for 4 minutes in medium flame
- Once dal reached medium heat, add spinach and required salt, saute it well for 5 minutes.
- Then add little amount of water (20 ml), mix it well and close the pan allow them cook for 10 minutes
- Add cooked rice and mix it for 3 minutes
- Finally sprinkle peanuts over it and mix it
- Now the Spinach rice is ready for serve
