Mutton Fry – மட்டன் வறுவல்
Ingredients
- small sized mutton pieces – 500g
- small Onions – 10
- Black pepper – 1 tsp
- Fennel seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Cinnamon stick – 2
- Cloves – 3
- Green chillies – 2
- Ginger – 1
- Garlic cloves – 6
- Red chilli powder – 1 tsp
- Turmeric powder – 1/4 tsp
- Coriander powder – 2 tsp
- Pepper powder – 1 tsp
- Mustard seeds – 1/2 tsp
- Curd – 2 tbsp
- Lemon – 1
- Coriander leaves – Required
- Curry leaves – Required
- salt – Required

How to Prepare
Total Preparation Time: 20-30 minutes
- Wash the mutton and drain water then add curd, turmeric powder, red chilli powder, salt and lemon and marinate for 2 hours
- Heat the pan, add 100ml water and boil mutton with masala for 10 minutes in low flame and keep aside
- Chop onions, chop tomatoes, crush black pepper, grate ginger, garlic and grind them like a paste, extract juice from lemon and keep aside
- Take a pan, fry black pepper, fennel seeds, cumin seeds, cinnamon stick, bay leaf, cloves, curry leaves and grind them well and keep aside
- Heat a pan with oil and add mustard seeds, once it crackles add onions
- Saute it till it become translucent then add green chillies, ginger garlic paste
- After that add coriander powder and prepared spice powder
- Fry it till the raw smell goes off, then add marinate mutton pieces one by one slowly
- Mix the pieces well with masala for 10 minutes in medium flame till it absorbs masala completely
- Add lemon juice, mix it well and close the lid and allow them to cook for another 5 minutes
- Open the lid and stir it well then close the lid and cook it till the water dried
- Finally garnish the mutton fry with coriander leaves
- Now the spicy Mutton fry is ready for serve
