Coconut Rice – தேங்காய் சாதம்
Ingredients
- Rice – 300g
- oil – 2 tbsp
- Mustard seeds – 1 tsp
- Urad dal – 1 tbsp
- Chana dal – 1 tbsp
- Cashew nuts – 13
- Dry chilies – 2
- Green chilies – 2
- curry leaves – Few
- coriander leaves – Few
- Fresh Coconut – 1
- salt – Required
How to Prepare
Total Preparation time: 35-40 minutes
- Grate coconut and keep it in a bowl then Slit green chillies and break the cashew nuts
- Soak the rice with water for 30 minutes and cook it then keep the cooked rice in a vessel
- After that take a pan and heat it with oil
- Once oil heated up, add mustard seeds followed by chana dal and urad dal
- Saute for 2 minute then add cashew nuts and cook it till it become golden
- Then Add 2 dry chillies, curry leaves and green chillies
- Fry it for 2 minutes then add 500g of grated coconut
- Mix it and saute it for 5 minutes till the coconut become light brown
- Add salt and mix it for half a minute
- Add cooked rice and stir it for 2 minutes.
- Turn off the flame finally sprinkle coriander leaves as toppings
- Now the coconut rice is ready to serve
