Prawn Fry – இறால் வறுவல்


Ingredients

  • Small prawns – 500g
  • Black pepper – 1 tsp
  • Fennel seeds – 1/2 tsp
  • Cumin seeds – 1 tsp
  • Cinnamon stick – 2
  • Cloves – 3
  • Bay leaf – 1
  • Star anise – 1
  • Ginger – 1
  • Garlic cloves – 6
  • Red chilli powder – 3 tsp
  • Turmeric powder – 1 tsp
  • Coriander powder – 2 tsp
  • Lemon – 1
  • Cumin seeds – 1/2 tsp
  • Red onion – 1
  • Green chillies – 4
  • Coriander leaves – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Wash the prawn in turmeric powder and salt twice and drain water and keep aside
  2. Grate ginger, garlic and grind them like a paste, chop onions, slit green chillies, extract juice from lemon and keep aside
  3. Take a pan, fry black pepper, fennel seeds, curry leaves, cumin seeds, cinnamon stick, bayleaf, cloves, anise, cinnamon and grind them well and keep aside
  4. Take a bowl, add ginger garlic paste, red chilli powder, turmeric powder, coriander powder, pepper powder, prepared spice powder, salt
  5. Add little amount of water then mix it well make them like a paste and keep aside
  6. After that add prawns and add oil and miranate for 30 minutes
  7. Heat the pan with 1 tsp oil, add cumin seeds once it splutters add onions, green chillies
  8. Saute it till become translucent, then add curry leaves followed by marinated prawns
  9. Stir them well until it swirl completely it may takes 5 minutes
  10. Finally garnish it with coriander leaves
  11. Now the spicy Prawn fry is ready for serve

Fish Fry – மீன் வறுவல்


Ingredients

  • oval sized fish pieces – 500g
  • Black pepper – 1 tsp
  • Fennel seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Cinnamon stick – 2
  • Cloves – 3
  • Bay leaf – 1
  • Star anise – 1
  • Ginger – 1
  • Garlic cloves – 6
  • Red chilli powder – 3 tsp
  • Turmeric powder – 1 tsp
  • Coriander powder – 2 tsp
  • Lemon – 1
  • Coriander leaves – Required
  • Curry leaves – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Remove the scales from the fish by scratching them, wash the fish in turmeric powder and salt thrice and drain water and keep aside
  2. Grate ginger, garlic and grind them like a paste, extract juice from lemon and keep aside
  3. Take a pan, fry black pepper, fennel seeds, curry leaves, cumin seeds, cinnamon stick, bay leaf, cloves, anise, cinnamon and grind them well and keep aside
  4. Take a plate, add ginger garlic paste, red chilli powder, turmeric powder, coriander powder, pepper powder, prepared spice powder, salt
  5. Add little amount of water then mix it well make them like a paste and keep aside
  6. Apply and smear this paste with fish pieces and marinate for 30 minutes
  7. Heat the pan with 3 tsp oil, slowly add the fish in oil
  8. Fry it for 5 minutes in medium flame on both sides
  9. Transfer the fishes into a plate and finally garnish it with coriander leaves, sliced onions
  10. Now the spicy Fish fry is ready for serve

Ragi Halwa – கேழ்வரகு அல்வா


Ingredients

  • Ragi flour – 125g
  • Milk – 250ml
  • Jaggery – 250g
  • Cardamom – 6
  • Cashew nuts – 30
  • Raisins – 8
  • Ghee – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Dissolve ragi with 250ml water without any lumps like a thin liquid and keep aside
  2. Heat a bowl add 250ml water and add jaggery, dissolve like syrup and filter it and keep aside
  3. Heat a pan with ghee, fry cashew nuts, raisins, cardamom for 2 minutes and keep aside
  4. And heat a heavy bottomed pan with 2 tbsp ghee and then ragi water and 250ml milk
  5. And stir it continuously till it become thinker it may takes 20 to 30 minutes and then add jaggery and mix it well
  6. After that add ghee fried raisin, cashew nuts, cardamom and mix it well for 3 minutes
  7. Then add 2 tbsp ghee and mix it well and stir till the ghee comes from the halwa this may take 30 minutes
  8. Stir it very well to avoid burnt bottom and once it become thicker, thick gooey, non sticky and this is the perfect halwa consistency
  9. Turn off the flame and transfer it into a bowl
  10. Now the healthy Ragi halwa is ready for serve

Apple Halwa – ஆப்பிள் அல்வா


Ingredients

  • Sweet Apples – 3
  • Milk – 250ml
  • Sugar – 250g
  • Cardamom – 6
  • Cashew nuts – 30
  • Raisins – 8
  • Ghee – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Take two apples, clean them, cut them and blend them with 300ml water, the juice will be thin and keep aside
  2. Cut 1 apple, grate it finely and keep aside, this is for apple flavour
  3. Heat a pan with ghee, fry cashewnuts, raisens, cardamom for 2 minutes and keep aside
  4. Take a heavy bottomed pan and heat it with 2 tbsp ghee then apple water and 250ml milk
  5. And stir them continuously till the recipe becomes thinker, this process may takes 20 to 30 minutes
  6. After that add sugar, grated apple then mix them well
  7. Now add ghee fried raisin, cashew nuts, cardamom then mix again and stir for 3 minutes
  8. Then add 2 tbsp ghee and mix it well and stir till the ghee comes from the halwa this may take 30 minutes
  9. Stir it very well to avoid burnt bottom and once it become thicker, thick gooey, non sticky and this is the perfect halwa consistency
  10. Turn off the flame and transfer it into a bowl
  11. Now the healthy Ragi halwa is ready for serve

Mutton Fry – மட்டன் வறுவல்


Ingredients

  • small sized mutton pieces – 500g
  • small Onions – 10
  • Black pepper – 1 tsp
  • Fennel seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Cinnamon stick – 2
  • Cloves – 3
  • Green chillies – 2
  • Ginger – 1
  • Garlic cloves – 6
  • Red chilli powder – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Coriander powder – 2 tsp
  • Pepper powder – 1 tsp
  • Mustard seeds – 1/2 tsp
  • Curd – 2 tbsp
  • Lemon – 1
  • Coriander leaves – Required
  • Curry leaves – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Wash the mutton and drain water then add curd, turmeric powder, red chilli powder, salt and lemon and marinate for 2 hours
  2. Heat the pan, add 100ml water and boil mutton with masala for 10 minutes in low flame and keep aside
  3. Chop onions, chop tomatoes, crush black pepper, grate ginger, garlic and grind them like a paste, extract juice from lemon and keep aside
  4. Take a pan, fry black pepper, fennel seeds, cumin seeds, cinnamon stick, bay leaf, cloves, curry leaves and grind them well and keep aside
  5. Heat a pan with oil and add mustard seeds, once it crackles add onions
  6. Saute it till it become translucent then add green chillies, ginger garlic paste
  7. After that add coriander powder and prepared spice powder
  8. Fry it till the raw smell goes off, then add marinate mutton pieces one by one slowly
  9. Mix the pieces well with masala for 10 minutes in medium flame till it absorbs masala completely
  10. Add lemon juice, mix it well and close the lid and allow them to cook for another 5 minutes
  11. Open the lid and stir it well then close the lid and cook it till the water dried
  12. Finally garnish the mutton fry with coriander leaves
  13. Now the spicy Mutton fry is ready for serve

Chicken Fry – சிக்கன் வறுவல்


Ingredients

  • Medium Chicken – 500g
  • small Onions – 5
  • Tomato – 1
  • Black pepper – 1 tsp
  • Fennel seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Bay leaf – 1
  • Cinnamon stick – 2
  • Cloves – 3
  • Green chillies – 4
  • Ginger – 1
  • Garlic cloves – 6
  • Red chilli powder – 1 tsp
  • Turmeric powder – 1/4 tsp
  • Coriander powder – 2 tsp
  • Garam masala powder – 1/2 tsp

Banana Halwa – வாழைபழம் அல்வா


Ingredients

  • Sweet Type Bananas – 3
  • Milk – 250ml
  • Sugar – 600g
  • Cardamom – 6
  • Cashew nuts – 30
  • Raisins – 8
  • Ghee – Required

Total Preparation Time: 20-30 minutes

  1. Cut the bananas and grind it a thick smooth paste and keep aside
  2. Heat a pan with ghee, fry cashew nuts, raisins, cardamom for 2 minutes and keep aside

Ash gourd Halwa


Ingredients

  • Small Pumpkin – 1/2
  • Milk – 100ml
  • Sugar – 200g
  • Cardamom – 6
  • Cashew nuts – 30
  • Raisins – 8
  • Ghee – Required

Total Preparation Time: 20-30 minutes

  1. Remove seeds and sloths of pumpkin then cut into pieces and grind like a thick smooth paste then keep aside
  2. Heat a pan with ghee, fry cashew nuts, raisins, cardamom for 2 minutes then keep aside
  3. Take a pan and add 100g sugar with 50ml water, allow them to melt completely
  4. And heat a heavy bottomed pan with 2 tbsp ghee and then add pumpkin paste and 100ml milk
  5. And stir them continuously till the recipe becomes thinker, this process may takes 20 to 30 minutes
  6. After that add sugar and mix them well
  7. Then add ghee followed by fried raisin, cashew nuts, cardamom then mix them well thoroughly and stir for 3 minutes
  8. After that add 2 tbsp ghee and mix again and stir till the ghee comes out from the halwa, this process may takes 30 minutes
  9. Stir it very well to avoid burnt bottom and once it becomes thicker, thick gooey, non sticky means the recipe is in perfect halwa consistency
  10. Finally turn off the flame and transfer the halwa into a bowl
  11. Now the tasty Ashgourd halwa is ready for serve

Mirchi Bajji – மிளகாய் பஜ்ஜி


Ingredients

  • Large green Chillies (Mirchi) – 10
  • Gram flour – 250g
  • Rice flour – 50g
  • Corn flour – 50g
  • Ginger – 1
  • Garlic cloves – 5 to 6
  • Fennel seeds – 1 tsp
  • Asafoetida – A pinch
  • salt – Required

How to Prepare

Total Preparation Time: 20-30 minutes

  1. Cut big green chillies into two halves vertically and remove seeds then keep aside
  2. Grind the ginger, garlic then add water, fennel seeds finally grind them well like a thick smoothy paste and keep aside
  3. Extract juice from lemon and keep aside
  4. Take a bowl, add gram flour, rice flour, corn flour, asafoetida, ginger garlic paste, salt and 200ml water
  5. Mix it well like a smooth batter with thick liquid consistency (not too think or too thin)
  6. Add sliced chillies into the batter and allow them to marinate for 10 minutes
  7. Take a hard bottomed vessel, add 300 ml oil and heats up
  8. After that take out a chilli and again dip into the batter and coat it again
  9. Now gently put prepared bajji into the oil
  10. Fry them till it become crispy and golden brown on both sides then move these bajji into a napkin to avoid excess oil
  11. Now the tasty Mirchi bajji is ready for serve

Potato Bajji – உருளைக்கிழங்கு பஜ்ஜி


Ingredients

  • Big Potatoes – 2
  • Gram flour – 250g
  • Rice flour – 50g
  • Corn flour – 50g
  • Ginger – 1
  • Garlic cloves – 5 to 6
  • Fennel seeds – 1 tsp
  • Asafoetida – A pinch
  • salt – Required

Wheat Halwa


Ingredients

  • Wheat flour – 200g
  • Sugar – 600g
  • Cardamom – 6
  • Cashewnuts – 30

  7. And heat a heavy bottomed pan with 2 tbsp ghee and then add wheat milk and 400g sugar
  8. And stir it continuously till it become thinker it may takes 40 to 50 minutes
  9. Then add ghee fried raisin, cashew nuts, cardamom and mix it well for 3 minutes
  10. Then add 2 tbsp ghee and mix it well and stir till the ghee comes from the halwa this may take 30 minutes
  11. Stir it very well to avoid burnt bottom and once it become thicker, thick gooey, non sticky and this is the perfect halwa consistency
  12. Turn off the flame and transfer it into a bowl
  13. Now the tasty Wheat halwa is ready for serve
