Sweet Pongal – இனிப்பு பொங்கல்
Ingredients
- Green rice – 250 g
- Moong dal – 65 g
- Chana dal – 35 g
- Milk – 500 ml
- Cardamom pods – 7
- Jaggery – 450 g
- Ghee – 50ml
- Cashew nuts – 3 tbsp
- Raisin – 2 tbsp
- Coconut – 1
How to Prepare
Total Preparation Time:
- Wash rice and soak it in 500 ml water and keep aside
- Take bowl and add 100 ml water, dissolve jaggery then filter the syrup to avoid tiny particles and keep it aside
- Grate coconut finely and keep aside
- Heat the pan and add moong dal, fry for 20 seconds
- Add Chana dal and roast for 20 seconds until the moong dal eject aroma smell
- Add roasted dals in soaked rice and soak it for 20 minutes
- Take a rice mud pot clean it well and place it over the stove and heats up
- Pour 750 ml water and 500 ml milk and boil them nicely until the milk rised up from the pot
- Reduce the flame then slowly add soaked rice and dal using a ladle
- Add the soaked water into pot then stirred it nicely then add cardamom
- Stir it gently and allow them to cook for 5 minutes till the rice and dal almost cooked
- Add this jaggery syrup into it and stir it gently and mix it well
- Cook it for 7-8 minutes in low flame
- In the mean time, heat up a pan and add ghee
- After ghee melts, add cashew nuts and raisins and fry them for 1 minute
- Once ghee starts to bubble, add 100g of grated coconut
- Roast this seasoning mixture for 2 minutes then add it to pongal.
- Mix it well in low flame for 4 minutes
- Now the Sweet Pongal is ready to serve
