Mango Rice – மாங்காய் சாதம்
Ingredients
- Rice – 250 g
- Mango – 1
- Turmeric powder – 1/4 tbsp
- Green chillies – 2
- Dry chillies – 2
- Curry leaves – Required
- Coriander leaves – Required
- Oil – Required
- Asafoetida – A pinch
- Mustard seeds – 1 tsp
- Urad dhal – 1 tbsp
- Bengal gram dhal – 2 tbsp
- Peanauts – 2 tbsp
- Ginger – 1
How to Prepare
Total Preparation time: 20-25 minutes
- Grate the mango, chop coriander leaves, mince ginger, chop green chillies separately and keep aside
- Remove the skin of peanuts then take a pan and fry peanuts without oil for 2 minutes and keep aside
- Wash rice cleanly then soak it in 380ml water for 30 minutes and cook it then transfer into a bowl and keep aside
- Take a pan add 1 tsp oil once oil heats up, add mustard seeds.
- Once it crackles, add urad dhal followed by bengal gram dhal, asafoetida
- Fry them for 2 minutes till the dals become golden
- Then add 1 tsp minced ginger, green chillies, red chilli, curry leaves
- Fry it for 2 minutes, add turmeric powder mix it well.
- Add grated mango and fry it for 10 second to avoid loosing mango’s flavor and then add salt and mix it
- Add cooked rice and mix it well for 5 minutes
- Then add fried peanuts into rice and mix it well
- Finally sprinkle coriander leaves
- Now the Mango rice is ready for serve
